Thanksgiving Round 2

For those of you who remember, last year was my first Vegan thanksgiving. I felt like it was a success…till this year. Ryan unabashedly admitted to not liking last years thanksgiving COMPARED to this years. My thought is, if you have been doing something long enough, you’ll get good at it and eventually master it right? I have been Vegan for over a year now (I officially recognize my veganism in January though) and I have made many successful meals, but also failed some meals as well.

So of course this year’s thanksgiving was better!The kitchen doesn’t scare me anymore, I naturally hold our 10 inch chef’s knife like a pro, and I can even use our mandolin without the hand guard…but don’t tell Ryan.

This year I made thanksgiving dinner (more like lunch) my b*tch! I prepped some of the ingredients the night before, and then busted out dinner in only 3 hours. Yes I could have definitely prioritized some things over others but if you came over for dinner that day, you’d say I had most of my shit together.

Here’s what I made from various recipes around pinterest (also in order from favorite to least favorite…hey I’m not a master chef yet):

Vegan Pumpkin Pie

Stuffed Butternut Squash Roast

Costco Veganized Stuffing

Cheesy Broccoli Rice Casserole

Mushroom Gravy

Homemade Mashed Potatoes

Balsamic Glazed Mushrooms

Roasted Vegetables

Green Bean Casserole

Now really the only thing that turned out sub-par was the green bean casserole. I think at this point I got cocky and thought I had this one down… it was just bland and there were too many green beans to cream. I also wish I had used canned green beans instead of frozen. But hey, notes taken for next year!

 

Side bar…well bottom bar… Ryan and I are starting our own cooking YouTube channel called “What does the Vegan eat?” where we eat, make, and recreate vegan food to answer the question… what does the vegan eat? Stay tuned for our first video… not sure what or when that will be but I will keep you updated!
